Yummy Yellow Squash Casserole


What have I been doing with all the Yellow Squash from our garden?????
Trying some fun new recipes!

Here is whatcha need:
4 cups sliced yellow squash
1/2 cup chopped onion
35 Buttery round crackers, crushed
1 cup shredded cheddar cheese
2 eggs, beaten
3/4 cup Milk
1/4 cup Butter melted
1 teaspoon salt
ground black Pepper to taste
2 tablespoons Butter

and Here is watcha do
First pre-heat oven to 400 deg.

*Place Squash and Onion in a large pan  over medium heat. Pour in a small amount of water . Cover and cook until squash is tender, about 5 min. Drain well and place in a large bowl.



*In a Medium bowl mix together Cracker Crumbs and Cheese. Stir half of the cracker mixture into the cooked squash and onions. In a small bowl , mix together Eggs and Milk, then add to Squash mixture. Stir in 1/4 cup melted butter and season with Salt and Pepper.


 Here is what the Cheese and Crumb mixture is going to look like!
 *Spread into a 9x13 lined pan SPRINKLE with remaining cracker mixture and dot with 2 tablespoons butter. Bake for 25 min. until lightly browned
 Mmmmmmm.......Squash Never tasted SOO GOOD!

  1. Who would have thought....squash and crackers! Sounds delicious. thanks so much for sharing on Craft Schooling Sunday. And by the way, if you grate that squash you can hide it in lots of food, even together with grated cheese!

  2. This is so delicious!! Picky husband, ravenous big-girl (who said that the pre-cooked version smelled good enough to eat- so why cook it?), and not-so-baby-anymore who insisted on calling it "basta"(pasta!) all practically inhaled it, as did I---thank you so much!!!
